SPRING

ROYAL RED BRITTANY LOBSTER
& BABY TURNIPS IN SAUTERNES WINE

For 2 to 3 people

  • 1 whole lobster (between 500 and 600 g)
  • ½ bottle of Sauternes wine (37.5 cl)
  • 1 bundle of baby turnips
  • 1 bundle of spring onions
  • 1 bundle of baby carrots
  • Coriander
  • Thyme
  • 50 g of salted butter

Place Maho Nabé on stove and warm delicately using low heat for 3-4 minutes.

Cut live lobster in half and cut each half in smaller, three-finger-wide sections.

Cut baby turnips, spring onions and baby carrots into long, thin slices.

Next, carefully place seasonal vegetables at the bottom of Maho Nabé with slice of salted butter. Add lobster sections.

Cover vegetables with Sauternes wine and cook for 7 to 8 minutes in closed Maho Nabé.

Add green peas and herbs.

Let ingredients cook for 4 to 5 minutes on low heat. Remove Maho Nabé from stove and place on trivet to let cooking continue for 10 more minutes without any additional heat.

Serve lobster and vegetables in Sauternes wine and salted butter juice.
